Blueberry Scones


I had a little container of blueberries I wanted to use up before they went bad. I made these little lovelies with them. I can not remember where I got the recipe for these. But, they are good! I used orange zest with this batch. My sissy and I are going to "play" tomorrow. She took the day off from her busy hectic banking job and I always have Friday's off. We have no agenda
and not a lot of money to spend....but we will have the company of each other and that is something we rarely get to have. Alone without kids, that is. :)
I think I might take a couple of these little babies with me tomorrow along with a hot cup of java with extra sugar and cream for her....cause that is how she takes hers. Hope she is not reading this!!
Here is the recipe if you would like to make some for yourself. They are not hard to make and they sure are yummy with a cup of coffee.
Blueberry Scones
1. 2 cups flour
2. 1/4 cup sugar
3. 1 Tablespoon baking powder
4. 1/4 teaspoon salt
5. 1/4 teaspoon baking soda
6. 1 Tablespoon grated orange or lemon rind
7. 1/4 cup butter
8. 3/4 cup buttermilk
9. 1 (farm fresh) egg
10. 1 teaspoon vanilla
11. 1 - 2 cups blueberries (I like to use fresh when I can)


Mix dry ingredients together in a large bowl. Cut the butter into the dry ingredients with a pastry blender, until fine.

Mix the wet ingredients in another bowl then add to the dry ingredients, stirring with a fork until all the mixture has been moistened. Fold in the blueberries.

Drop by large spoonfuls onto a parchment paper lined cookie sheet. (Be gentle with this kind of dough)
Bake at 400 F for 18 minutes.


Make a glaze by mixing in a small bowl . . .3/4 cup icing sugar 1 tsp of the peel from the citrus you chose earlier. 3 Tbsp of lemon or orange juice that you earlier chose. Mix and drizzle over scones while still warm.
